Capacity is one part of a professional purchasing decision. Start with the volume of culinary preparation your team expects, then check the equipment required by the manufacturer for that product.

A higher listed capacity may suit a higher-volume workflow, but it can also require a specific compatible setup and appropriate storage planning. Avoid choosing only by size.

Use the website filters to compare the capacities actually present in the current catalogue. Send the selected product and your existing equipment details for a compatibility and availability check before purchase.

Turn the expected workload into a simple comparison before looking at the largest option. Record a normal day's preparation, the busiest service period, and the number of separate stations that need access. A small bench with frequent menu changes may value easier handling, while a high-volume pastry operation may value fewer interruptions. Those are workflow differences, not proof that one size is universally better.
